Baking Tips & Hacks
These Strawberry Cheesecake Cookies With Cake Mix are a bit softer than some of my other ones because of the moisture from the strawberries. You can add 2-3 tbsp of flour instead of the cake mix flour or use only 1 egg instead of two for crispier cookies.
It’s important to freeze the cheesecake filling before baking these cookies- otherwise, it may overcook, melt out onto the sheet pan or even burn.
Storage Tips
The best way to store Strawberry Cheesecake Cookies With Cake Mix is to first let them cool completely on a wire rack. If you store them while they are still warm, they can become soggy or lose their shape. Then put the cookies in an airtight container like a plastic container or a resealable plastic bag. This keeps them fresh longer and prevents them from drying out. If you are storing multiple layers of cookies, separate each layer with parchment paper or wax paper so they don’t stick together. They will stay fresh in the refrigerator for about 5-7 days and up to 3 months in the freezer.

Chilling cookie dough before baking is important for multiple reasons. First of all it allows the flavors to mesh and meld together. Chilling also prevents cookies from spreading too much during baking. If you like thick chewy cookies, don’t forget this step! The cold dough melts slower too which creates a better shape and texture. They also tend to have a smoother surface and a more consistent shape. So don’t forget to chill the dough and freeze the cheesecake filling for these Strawberry Cheesecake Cookies With Cake Mix!
