What Ingredients Do You Need?

  • 1 Box White Cake Mix 
  • ½ cup oil
  • 2 eggs
  • 1.5 cups sliced strawberries 
  • 16 oz cream cheese 
  • 1 cup powdered sugar 
  • 2 tsp vanilla extract 
  • ½ tsp salt 
  • Vanilla glaze and crumbled Graham crackers for topping (optional) 

How Do I Make Them?

  • Remove ¼ cup of cake mix and set aside
  • Combine the rest of the cake box mix with oil and eggs in your stand mixer and mix until combined 
  • Add the ¼ cake mix to the strawberries and toss until they’re coated 
  • Add ½ of the strawberry mixer to the cookie dough and mix until combined 
  • Use a large cookie scoop to make 12 cookie dough balls and chill in the fridge for at least 30 minutes 
  • Combine the cream cheese, powdered sugar, vanilla, salt, and the rest of the strawberries into the mixer and mix for 5 minutes or so until smooth 
  • Use medium cookie scoop to make 12 cheesecake balls and set on parchment 
  • Freeze the cheesecake balls for at least 1 hour 
  • Use the back of the scoop to make bowl in the cookie dough 
  • Set the cheesecake balls into the cookie dough ball bowls
  • Preheat oven to 350 degrees F 
  • Bake for 13-15 minutes 
  • Drizzle with glaze and sprinkle with graham cracker crumbs!

Baking Tips & Hacks 

These Strawberry Cheesecake Cookies With Cake Mix are a bit softer than some of my other ones because of the moisture from the strawberries. You can add 2-3 tbsp of flour instead of the cake mix flour or use only 1 egg instead of two for crispier cookies. 

It’s important to freeze the cheesecake filling before baking these cookies- otherwise, it may overcook, melt out onto the sheet pan or even burn. 

Storage Tips 

The best way to store Strawberry Cheesecake Cookies With Cake Mix is to first let them cool completely on a wire rack. If you store them while they are still warm, they can become soggy or lose their shape. Then put the cookies in an airtight container like a plastic container or a resealable plastic bag. This keeps them fresh longer and prevents them from drying out. If you are storing multiple layers of cookies, separate each layer with parchment paper or wax paper so they don’t stick together. They will stay fresh in the refrigerator for about 5-7 days and up to 3 months in the freezer.
