Cupcake Tips & Hacks : Scream Recipe

The first time I made a batch of the actual cupcakes I didn’t know how much black color to add. So I didn’t add enough at first when mixing the cake batter. I kept having to add more and more and then mix again and again. Which inevitably caused me to overmix my batter. So just know if you want the cupcakes to be very black you will need more than just a few drops.

Add the black food coloring in before you mix the Halloween Cupcake batter at all so you don’t have to do any extra mixing. If you want to add more later because they don’t look black enough, gently mix it in. This is the best way to get the results you want for your best slasher movie cupcakes! Mix the food coloring into the batter until it is evenly distributed. Make sure there are no streaks or clumps of color.

Make sure the glaze, frosting, and the cupcake is cold when you drip the blood red glaze on the top. Otherwise if it’s too warm, the glaze will become too thin and roll right off the cupcakes, resulting in a big mess.

Frosting Piping Tips & Hacks

Hold the filled piping bag with one hand and use your other hand to guide and control the flow of frosting. Squeeze the bag gently from the top, applying steady and even pressure to pipe the frosting through the star tip.

Practice piping on a piece of parchment paper or a test surface to get comfortable with the pressure and technique before decorating your cakes or cupcakes. Prepare a large piping bag. Fit the bag with a 1M star tip by inserting the tip into the opening of the bag. Push it down until the tip is fully inserted, but leave enough of the tip exposed to allow the frosting to flow out. Fold the top of the piping bag over your hand or a tall glass. This will create a cuff or collar, making it easier to fill the bag with frosting.

Using a spatula or a spoon, transfer the prepared vanilla buttercream frosting into the piping bag. Fill it about two-thirds full to avoid overfilling which would cause the frosting to squeeze out the top when you pipe. Gently push the frosting down toward the tip, ensuring there are no air pockets trapped inside the bag.

You can do this by applying light pressure with your hand or by gently tapping the bag on a flat surface. Once the bag is filled, you can twist the top of the bag and secure it with a rubber band or a bag clip for extra security if you need it. The tall white frosting needs to be nice and stiff for your Scream recipe. The blood red glaze trickling down the frosting is critical for the slasher movie theme!

Equipment

  • Cupcake pan and liners
  • Stand mixer or mixing bowl and whisk

Ingredients

  • For The Buttercream
  • 1 cup 2 sticks unsalted butter, softened
  • 4 cups powdered sugar sifted
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons heavy cream
  • Pinch of salt
  • For The Cupcakes
  • Box Devils Food Cake Mix
  • 3 eggs
  • ½ cup vegetable oil
  • 1 cup water
  • Black food color
  • Blood Red Glaze

Instructions

  • In a large mixing bowl, cream the softened butter using an electric mixer until it becomes smooth and fluffy.
  • Gradually add the powdered sugar to the bowl, about 1 cup at a time, and continue mixing on low speed until well combined. Scrape down the sides of the bowl as needed.
  • Add the vanilla extract and a pinch of salt to the mixture and mix until fully incorporated.
  • Slowly pour in the heavy cream, starting with 2 tablespoons. Mix on low speed, then increase the speed to medium-high and continue mixing until the frosting reaches a smooth and creamy consistency. Add more cream or powdered sugar if needed to achieve the desired consistency.
  • Prepare a large piping bag. Fit the bag with a 1M star tip by inserting the tip into the opening of the bag.
  • Transfer the prepared vanilla buttercream frosting into the piping bag.
  • Set the frosting in the refrigerator until about 20-30 minutes before you’re ready to frost the cupcakes – depending on the temperature of your house. If it’s too cold it will break up when piping, if it’s so warm it will not hold its form.
  • Preheat the oven to 350°F (175°C). Make sure the oven rack is positioned in the center.
  • Take a standard-size cupcake pan and line it with cupcake liners.
  • In a large mixing bowl, combine the box of Devil’s Food Cake Mix, black food color, 3 eggs, ½ cup of vegetable oil, and 1 cup of water to the bowl.
  • Using an electric mixer or a whisk, beat the ingredients together until they are well combined. Make sure there are no lumps and the batter is smooth.
  • Once the batter is smooth, if it’s not black enough add more color and mix until it’s as dark as you want.
  • Remember that the color may darken slightly as the cupcakes bake.
  • Fill each cupcake liner with the batter, filling them about two-thirds full. This will allow the cupcakes to rise without overflowing.
  • Bake the Halloween cupcakes for 15 minutes then remove them from the oven and let them cool in the pan for a few minutes.
  • Then transfer them to a wire rack to cool completely, then set in the fridge for 30 minutes before decorating.
  • Frost with your prepared frosting, drizzle with the glaze, then sprinkle with edible black glitter.

Storage Tips For Scary Movie Snacks : Scream Recipe Cupcakes

Since these cupcakes have so much delicate decoration it’s a little tricker to store them. That’s because you want to make sure they don’t smash each other and keep the frosting/glaze intact. If you can eat them in a day or two just rest them on a clean shelf in the fridge in their cupcake liners. Otherwise get a large and tall container and carefully place the cupcakes inside. Don’t crowd them into each other. The air tight lid should not squish the tops of the frosting especially the slasher movie toppers. You can always take the little guys out and put them to the side until later.
