Tips For Pot O Gold Rainbow Frosted Cookie Recipe

  4. ROYGBIV Order: Follow the rainbow spectrum – Red, Orange, Yellow, Green, Blue, Indigo, Violet. Apply the colors in this order for a classic rainbow look. – I didn’t do that but you should lol. 
  5. Gradual Blending: When transitioning between colors, mix a bit of the adjacent colors to create a smooth gradient effect.

How Did You Make The Pot O Gold Candies?

To make the pot o gold for this Pot O Gold Rainbow Frosted Cookie Recipe, I used mini Reese’s pieces cups and cut them in half then I used a lighter to quickly melt some chocolate at the top. Then while the chocolate is still melted, put the gold sprinkles. 

In order to make pot of gold with peppermint patties, use the same method only don’t cut them in half.

Cookie Baking Tips 

Don’t chill the cookie dough before baking it so the cookies bake flat. Otherwise they might stay puffed up which makes it hard to frost. 

What Ingredients Do You Need For Pot O Gold Rainbow Frosted Cookie Recipe 

  • 1 box white cake mix
  • ¼ tsp salt 
  • 2 eggs
  • ½ cup vegetable oil 
  • 8 oz frosting blue – i used this Marshmallow Buttercream
  • 8 oz frosting purple
  • 8 oz frosting green
  • 8 oz frosting red
  • 8 oz frosting orange
  • 8 oz frosting yellow 
  • 8 oz frosting white 
  • mini Reese’s peanut butter cups or peppermint pattys 
  • gold sprinkles

How Do You Make The Cookies? 

  1. combine box mix with eggs oil and salt and mix until cookie dough forms 
  2. Use a medium cookie scoop to make 12 cookie dough balls
  3. preheat the oven to 350 degrees f
  4. line your baking sheet with parchment paper
  5. lay out cookie dough balls and cook for 12-15 minutes 
  6. let the cookies rest to room temperature 
  7. pipe each color of frosting in its own bag with a smallish open hole piping tip 
  8. make the rainbow in the top portion of the cookie
  9. use a 1M star tip to make the clouds with the white frosting 
  10. put a pot o gold candy on one side of the rainbow in the cloud!
