Recipe Tips & Hacks 

It’s really important to let the No-Bake Pumpkin Cheesecake chill for at least 4 hours, but overnight is best. This sets the texture otherwise it will have a mousse or pudding like texture rather than cheesecake. 

If you don’t want to use mason jars that’s okay, use little bowls or cups. Whatever works for your household or event. 

Make sure you use whipped cream or cool Whip and not simply heavy whipping cream. You can use heavy whipping cream but you need to whip it into whipped cream first otherwise the texture will be altered. Cool whip is best for a sturdy texture. 

It is also important to fold in the cool whip or whipped cream and not blend it in. Again this is for texture preserving purposes!

What Tools Do I Need? 

  • 6 (6oz) mason jars – this is what I used but you can use something else of course. Glass mason jars wouldnt be the best for serving small children for example. 
  • Food processor – this tool is needed to blend the Graham crackers into crumbs, but you can use a regular blender or simply a large zip lock bag if you’re prepared to crunch them manually! 
  • Piping Bag and 1M drop star tip (optional) – This is what I used to swirl the No-Bake Pumpkin Cheesecake into the mason jars because it looked pretty! This is optional of course. 
  • Mixing Bowls 
  • Electric Beater – or stand mixer with beater attachment 
  • Spatula – to scrape the sides of the mixing bowls and to fold in the cool whip.

Equipment

  • 6 (6oz) mason jars
  • Piping Bag and 1M drop star tip (optional) – Mixing Bowls
  • Electric Beater – or stand mixer with beater attachment
  • Spatula

Ingredients
  

  • For the Graham Cracker Crust:
  • 1 1/2 cups graham cracker crumbs about 12 graham crackers
  • 1/4 cup corn syrup
  • 1/2 cup unsalted butter melted
  • For the Pumpkin Cheesecake Filling:
  • 15-ounce can pumpkin puree
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped cream or whipped topping

Instructions
 

  • Prepare the Graham Cracker Crust:
  • In a food processor, pulse the graham crackers until they turn into fine crumbs. Alternatively, you can place them in a zip-top bag and crush them with a rolling pin.
  • In a bowl, combine the graham cracker crumbs, sugar, and corn syrup. Mix until the crumbs are evenly coated.
  • Place 2 tablespoons of the graham cracker mixture at the bottom of each mason jar. Press down to create a firm crust.
  • Make the Pumpkin Cheesecake Filling:
  • In a large bowl, beat the softened cream cheese until it’s smooth and creamy.
  • Add the pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract. Mix until well combined.
  • Gently fold in the whipped cream or whipped topping until the mixture is smooth and fluffy.
  • Assemble the Cheesecake in Mason Jars:
  • Spoon the pumpkin cheesecake mixture into the mason jars – or do what I did which was fill a large frosting bag piped with a 1M drop star tip with the pumpkin cheesecake filling and pip it into the mason jars – creating a swirl !
  • Cover the mason jars with lids or plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set.
  • Before serving, you can garnish each cheesecake with a dollop of whipped cream and a sprinkle of cinnamon, if desired.
