Equipment

  • 10 oz Mason jars
  • Sauce pan

Ingredients
  

  • 1 cup dragon fruit chunks a few extra for garnish
  • 2 cups granulated sugar
  • cups water
  • ½ cup light corn syrup
  • For The Cheesecake
  • 16 oz cream cheese
  • ½ cup sour cream
  • ¾ cup heavy cream
  • 1 cup powdered sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • For The Crust
  • 1 cup crushed vanilla Oreos
  • 3 tbsp melted butter
  • 2 tbsp light corn syrup
  • Pinch of salt

Instructions
 

  • Start by making the compote/ fruit filling by combining water, granulated sugar, and light corn syrup in a sauce pan and bring to a simmer- stir occasionally
  • Add in the dragon fruit and simmer for a few minutes
  • Mash and stir the dragon fruit into the mixture – if your dragon fruit was white and not pink you can add a few drops of pink food color here
  • Turn off the heat and set it aside to rest
  • In a separate large bowl combine the heavy cream and powdered sugar and beat until high firm peaks develop (this is important for optimal cheesecake texture)
  • In a separate bowl combine room temperature cream cheese, sour cream, vanilla, salt and mix until smooth and cream
  • Then fold the whipped cream in with the cheesecake mixture with a spatula until gently combined
  • Once the dragon fruit mixture cools down to room temperature – set ¼ cup aside for garnish – then gently fold into the cheesecake mixture
  • Cover with plastic wrap and set in the refrigerator (for best results set overnight)
  • Use a food processor to blend golden Oreos into crumbs mix in the melted butter, corn syrup, and salt
  • Fill the bottom of a bowl, mason jar, or cup with 2-3 tbsp of the crust crumbles
  • Fill the rest of the cup up with cheesecake filling
  • Garnish with some dragon fruit chunks and some of the compote/ glaze filling
