The pink color of this No Bake Dragon Fruit Cheesecake Recipe is half the fun! I bought two dragon fruits from the store and neither one was pink! They were both white so I added some pink food color. If you want make sure you pick a pink one check out these tips:

  1. Look for vibrant and bright pink or magenta skin. A ripe pink dragon fruit will have consistent coloring without many blemishes or brown spots.
  2. Gently press the fruit. It should give slightly when you apply light pressure, similar to a ripe avocado.
  3. Check the skin for any signs of drying or shriveling. A fresh pink dragon fruit should have taut, smooth skin.
  4. Choose a fruit that feels heavy for its size. This indicates that it’s juicy and filled with flesh.
  5. The green scales or leaves at the top of the fruit should be healthy-looking and not wilted or brown.
  6. Smell the fruit; a ripe pink dragon fruit should have a sweet, slightly floral aroma.

These tips will help you choose a pink Pitaya for your No Bake Dragon Fruit Cheesecake Recipe!
