What Did I Learn From Making This Cake?
As a home cook with no formal training I like to share what I will improve on further recipes. When I made this Easy Homemade Christmas Cake Recipe & Decoration I did not scrape/smooth the sides of the red frosting. I only did the crumb coat then frosted over it and figured it would be fine lol. On my next cake I will take the time to smooth the sides with a cake scraper. I actually photoshopped the images to smooth out the frosting in editing!
Next time I will level off both layers of the cake. For this cake I only leveled off the bottom layer so that the cake would be sturdy. But now after seeing the final results, the cake would have looked a lot more professional if I had leveled off the top layer of cake as well. As you can see in the images the top layer of Xmas cake is rounded. Even with these extra cake decorating steps this Christmas cake will still be very fast!

Ingredients
- 2 Boxes Vanilla Cake Mix

- 8 oz white cake drip or melted white melting candies
- 1 cup white frosting I used ready made canned frosting and added the colors with food coloring
- 1 cup green frosting
- 2 cups red frosting

Instructions
- Make & Color The Cake Batter
- Make each box cake mix separately- combine ingredients until smooth- you should have two bowls of equal portions of cake batter
- *Combine each box cake mix with 3 eggs, ⅓ cup vegetable oil, and 1 cup water or milk. Mix until smooth.
- In one of the bowls add green food coloring and whisk until combined
- Add easy one to one large piping bag
- Spray your pans and line with parchment paper
- Preheat your oven to 350 degrees F
- Drizzle layers of white cake batter followed by green cake batter into each pan until the batter is all used
- Try to make them equal – you can weight them with a scale if you don’t feel comfortable “eyeballing” it
- Bake for 35-40 minutes if the batter was chilled cold – bake for 30 minutes if the cake batter was room temperature
- Rest the cakes to room temperature then chill in the refrigerator for several hours- like 3 hours – until the cakes are cold
- Frost The Cake
- Level off the tops of your cake layers so they are flat and not rounded for best results
- Put the first cake layer on a serving plate or cake stand. You can add a small dab of frosting on the plate to help anchor the cake.
- Spoon or spread a generous amount of your white frosting onto the first cake layer, Use an offset spatula or a butter knife to spread it evenly, covering the entire surface.
- Add the Next Cake Layer: Carefully place the next cake layer on top of the frosting-covered first layer.
- Apply a thin crumb coat to the entire cake at this point to seal in crumbs. Chill the cake for a brief time to set the crumb coat.
- Frost the Entire Cake: Once the crumb coat has set frost the entire cake with the red frosting, covering the top and sides. Use a spatula or cake smoother to create a smooth finish.
- Add The Sprinkles
- Take handfuls of sprinkles and press them around the lower inch or so of the cake all the way around
- Apply the white drip: carefully drizzle the white drip around the edges of the top layer of your cake. Allow some of the drips to naturally run down the sides. You can control the length of the drips by how much chocolate you release and how close you hold the bottle or piping bag to the edge.
- If you want a more controlled look or want to cover the entire edge of the cake with the drip, use an offset spatula to gently spread the drips around the perimeter of the cake’s top layer. (Something I will try with my next cake!)
- Chill the cake for another 30 minutes
- Frost The Top & Add The Toppers!
- Apply the green flowers: Hold the piping bag at a 90-degree angle to the cake’s surface, with the wide end of the star tip touching the cake. Squeeze the piping bag to start the flow of frosting and create a small star flower shape by applying gentle pressure while moving the tip in a circular motion.
- Continue piping these flowers around the perimeter of the cake, spacing them evenly. Each flower should slightly overlap the previous one.
- Add some festive toppers and serve!
