  • ½ can of Rotel (10 oz)
  • ¼  cup of finely chopped onion
  • 1 tablespoon of lime juice
  • Salt and pepper to taste
  • Your favorite spice blend (I used Weber Flavor Bomb Burger because it was on the shelf and I’m glad it was!)

  1. Cut the avocados in half and remove the pits. Scoop out the flesh into a mixing bowl.
  2. Using a fork, mash the avocado until it’s smooth, but still slightly chunky.
  3. Add the half can of Rotel (drained) to the mixing bowl and stir until the tomatoes and chilies are evenly distributed.
  4. Add the finely chopped onion, lime juice, spices, salt, and pepper to the bowl. Mix everything together until the ingredients are evenly combined.
  5. Taste the guacamole and adjust the seasoning as needed.
  6. Serve the Easy Guacamole With Rotel immediately with tortilla chips, veggies, or as a topping for tacos, burritos, or nachos.
