What are the Ingredients?

  • 1 cup dragon fruit chunks 
  • 1 cup granulated sugar
  • ½ cup water
  • ¼ cup light corn syrup
  • 8 oz cream cheese 
  • ¼ cup sour cream 
  • ¼ cup heavy cream 
  • ½  tsp vanilla 
  • 1 box vanilla cake mix 
  • ½ cup oil 
  • 1 egg

  1. Start by making the compote/ fruit filling by combining water, granulated sugar, and light corn syrup in a sauce pan and bring to a simmer- stir occasionally 
  2. Add in the dragon fruit and simmer for a few minutes 
  3. Mash and stir the dragon fruit into the mixture – if your dragon fruit was white and not pink you can add a few drops of pink food color here 
  4. Turn off the heat and set it aside to rest 
  5. In a separate large bowl combine the heavy cream and powdered sugar and beat until high firm peaks develop (this is important for optimal cheesecake texture) 
  6. In a separate bowl combine room temperature cream cheese, sour cream, vanilla, salt and mix until smooth and cream 
  7. Then fold the whipped cream in with the cheesecake mixture with a spatula until gently combined 
  8. Once the dragon fruit mixture cools down to room temperature add 1 cup into the cheesecake mixture and gently fold – set the rest aside for the cookie dough and garnish 
  9. Cover with plastic wrap and set in the refrigerator (for best results set overnight) 
  10. Combine box cake mix with ½ cup vegetable oil, 1 egg, and and ¼ cup of the dragon fruit glaze/ filling mixture 
  11. Whisk until cookie dough forms 
  12. Preheat oven to 350 degrees F 
  13. Line cookie sheet with parchment paper
  14. Use medium cookie scoop to make 9-12 cookie dough balls on your cookie sheet 
  15. Bake for 12-15 minutes 
  16. Let rest to room temperature then chill for 30 minutes 
  17. Add a dollop of dragon fruit cheesecake to the top of the dragon fruit cookies and top with glaze and some dragon fruit chunks
