This baked chicken pinwheel recipe is the best little meal or snack any day and time of year. You can make these for lunch boxes or after school snacks. I love to bring these to work with me and pop them in the microwave late at night when I’m watching my favorite shows.   • 1 can biscuit dough – Grands is a popular brand but whatever biscuit dough you like or is on sale is totally fine. 
  • 1 cup shredded chicken – You can make your own shredded chicken by cooking up some chicken thighs or do what I do which is buy a cooked rotisserie chicken and shred it up myself!
  • 1 cup chopped spinach- You can substitute another vegetable or omit this ingredient for this Baked Chicken & Spinach Pinwheel Recipe.
  • ½ cup Parmesan cheese- Grating your own Parmesan cheese is best for freshness but I always just use the powdered kind. 
  • 8 oz cheese slices – I used 1oz American cheese slices that we already had in the refrigerator that my husband really likes. However you can use any cheese you want. 
  • Non stick cooking spray – This ingredient is used to spray the dough before adding in the spinach and chicken to help them stick. The biscuits I used already had a lot of butter so I didn’t want to add more butter. However oil or melted butter would work well for the Baked Chicken & Spinach Pinwheel Recipe.

  1. Open the can of biscuit dough
  2. Take each dough portion and roll it into a long cylindrical shape (Think making a snake out of Playdough)- using a cookie dough roller helps a lot
  3. Lay it flat and place bits of chicken and cheese on the dough and press them slightly into the dough
  4. Starting on one side roll the dough inward carefulling keeping the meat and cheese in the center
  5. Roll it all the way until it’s a circle then lay it flat on a sheet pan lined with parchment paper
  6. Sprinkle more meat, spinach, and some Parmesan cheese on top
  7. Bake at 350 degrees for 10-12 minutes
  8. Rest for 10 minutes
