Ingredients 

  • Box Cake Mix – Devil’s Food – but you can use any kind of chocolate cake mix
  • 2 eggs
  • ½ cup vegetable oil 
  • 8 oz cream cheese 
  • 1 cup Andes Mint Chocolate Baking Chips

Directions For Andes Chocolate Mint Cookie Recipe 

  • Combine room, temperature, cream cheese, and the Andy’s mint chocolate baking chips and your stand mixer and mix until combined 
  • Line a flat tray with parchment paper then a small key scoop to make six or seven portions of cream cheese mix balls set the tray in the freezer for one hour
  • Leave a little bit of the cream cheese mixture in the mixing bowl, then combine your picnic eggs and oil and mixed into cookie dough
  • Line a sheet pan with parchment paper and use a medium scoop to make 12 portions of cookie dough, set them on the sheet pan and put in the refrigerator for one hour
  • Add a frozen cream cheese ball into the center of cookie dough, balls, and then use the other six cookie dough, balls shoe mash on top roll each one with your hands until the cream cheese is fully covered inside 
  • Bake at 350 degrees F for 12-15 minutes 
  • Optional: drizzle with cake drip and more Andes Mint Chocolate Baking Chips
