What Do I Need?

  • 3 cups pancake mix (don’t pack into measuring cup – just scoop and scrape off excess)
  • 2 large eggs, beaten
  • 3/4 cup milk
  • 1 lbs cooked BBQ Pulled Pork – chilled from the fridge 
  • ½ cup cream cheese – chilled from the fridge 
  • ½ tbsp of chipotle seasoning 
  • Pinch of salt and pepper

How Do I Make Them? 

  1. Combine the cooked BBQ Pulled Pork, cream cheese, and pinch of salt and pepper in a bowl and mix it together 
  2. In a large bowl, combine pancake mix, eggs, milk, and chipotle seasoning and whisk – set in the refrigerator 
  3. Use a small cookie scoop to scoop portions of the pork mixture and set on a flat tray lined with parchment paper – freeze for 30 minutes. You want them to be solid and hold shape in the batter but not rock hard frozen.
  4. Preheat the air fryer to 350 degrees and line the basket with tin foil. 
  5. Dip each pork ball into the pancake batter and set directly on top of the foil in the basket.
  6. Cook in batches (4-6 at a time) for 5-6 minutes 
  7. Let the Air Fryer Pancake Mix Pulled Pork Fritters
  8. rest for 10 minutes then serve! 


Can I Make Them In The Oven?

Yes just follow the other directions but place the uncooked fritters on a sheet pan lined with parchment paper.

Pre-heat the oven to 350 degrees F and bake for 12-15 minutes!

How Do I Store My Air Fryer Pancake Mix Pulled Pork Fritters
